The quality of the food (and drink) on Carnival ships always surprises us, given the budget pricing of the brand. Despite being one of the industry's lowest-cost operators, Carnival manages to pull off one of the best steakhouses at sea in Fahrenheit 555, and even the no-extra-charge main restaurants get the basics right. Other extra-charge eateries often found on Carnival vessels include Bonsai, an a la carte sushi restaurant (now on 14 ships), and JiJi Asian Kitchen, which costs $24 per person (now on four ships). Note that Carnival's two oldest ships — those that are part of the 1990s-built Fantasy Class — have relatively few balcony cabins by today's standards. (After retrofitting, several have around 150 balcony cabins, out of a total of more than 1,000 cabins in all.) In part because of this, Carnival has been phasing these ships out of its fleet in recent years. Each of the vessels in Carnival's recent Vista Class series, for instance, offers fewer than 75 suites.

The XL-Class design features a new (red-white-navy blue) hull and was created by the NYC-based naval architecture firm "Bluarch Architecture". A slightly more expensive "value" plan, at $19.55 per day when bought in advance, adds access to email and most websites.

The 2023-built Carnival Jubilee cruise ship is CCL fleet's newest and largest liner (fleet's 26th vessel) and the third/last unit of the XL-Class (aka EXCELLENCE) inaugurated in December 2023. Carnival's XL units in this series are from the German shipbuilder Meyer Werft (shipyard Papenburg). In late-December CCL employed the renowned chef and restauranteur Emeril John Lagasse (1959-born American celebrity chef, restaurateur, author, TV personality) as the company's Chief Culinary Officer. The announcement mentioned that chef Lagasse's "Emeril's Bistro" (restaurant introduced on Mardi Gras) will be utilized fleetwide. In February was introduced CCL's exclusive beer "Lord Nelson’s Smooth Sailing Cruising Ale". CCL's partnership with "The Lord Nelson Brewery Hotel" (1815-built, based in The Rocks, NSW Australia) is since June 2014, when was introduced the "Thirsty Frog Summer Ale".
The HUB app was last updated in June 2017 and now offers the хew features weather forecast (for each day of the itinerary), dining menus, tips info (dress code, shipboard events schedules, deck plans, ports info). Carnival has been spending a lot on fleetwide refurbishments and upgrades since 2007. The initiative "Evolutions of Fun" cost USD 350 million (8x Fantasy-class vessels) and included new open-deck spaces, kids- and family-themed facilities and activities, Carnival WaterWorks (aquapark with slides). Celebration Central (midship location on decks 6-7-8) is an expanded Atrium concept combining a day-to-night entertainment complex with a bar lounge (overlooking the ship's starboard side) with 3-decks high floor-ceiling windows. Carnival Celebration staterooms (a total of 2641 passenger cabins) are divided into 22 different categories, including 2-deck apartments (duplex suites) and 80 wheelchair-accessible cabins (for disabled passengers). All cabin bathrooms feature CCL fleet's first glass-door showers and in-shower shaving bar.
Each of the line's earlier Conquest Class ships has around 50 suites. The oldest Fantasy Class vessels have 28 suites and 26 junior suites. Since July 2015, Carnival Cruise Line offers new shore excursions, new customized private tours and new family-friendly enhancements with complimentary beachside activities and complimentary land tours in select Caribbean ports of call. All affected bookings received full monetary refunds (100%), including on prepurchased through CCL packages and services. With rebooking (made by May 31, 2021), refunds were in FCC (future cruise credit) transferred to the new booking. Cruises 5-day or shorter received a full monetary refund or a 100% refund in FCC plus USD 300 in OBC (onboard credit) per stateroom.
